Energy Balls

What you'll need


Pitted dates

Mixed nuts - used your favourites (any nuts work well as they are blitzed in food processor)

Peanut butter

Dark chocolate (grated or crushed)

Dessicated coconut/ cocoa powder for coating


Extras for variations

Raisins

Dried cranberries



You can make up to your desired quantities which is why I haven't added measurements in. Getting the consistency to roll into small balls is easy, if it's too dry, add more peanut butter, or too wet, add more fruit and nuts 


  1. If dates are dry, soak in water for 10 mins to soften
  2. Cut up dates, add nuts and chocolate and blitz in food processor
  3. Add tablespoons of peanut butter a little at a time until desired consistency is reached. Try to roll a ball, if the ingredients hold together well and aren't too wet you can roll 3cm diameter balls and coat in either dessicated coconut or cocoa powder



This is a very loose recipe and open to lots of variations to suit all tastes

Can be stored in fridge for 2 weeks or freezer for even longer. 


I also added prunes to ours which made the mixture a lot wetter but worked well
